Nice and Easy Grilled Pork Belly Bites

What’s a girl (or guy) to do with trimming of pork belly?! Burnt ends, pork belly bits, belly bites, whatever you want to call them, they are amazing!

Our son loves to help with cutting meat, butchering, and even killing pigs as long they’re not his favorite ones. So we harvested a couple of our bigger males this week, and he likes to pull the leaf lard out of the cavity. He said he needed a knife for a bit and ended up getting into the side too far and cutting into the pork belly slab. No problem; pork belly bites are my next favorite thing after the bacon we made with this recipe!

I have pretty simple tastes who it comes to flavoring pork. Feel free to add or omit whatever you like as I know there are so many recipes out there! I tend to leave out the spicy parts but do like smoked paprika.

First thing to do is cube the pork belly into 1.5 inch squares, or whatever makes it square with the thickness that you have. If you are using some scraps that are just too good to grind into sausage then they may not be square. They taste the same!

I mixed all my dry ingredients in a bowl big enough to roll the cubes around in.

After seasoning, one layer spacing across a rack that can go on the grill safely.

After being on the grill for about two hours at 275*. Internal temp of 165*

Transfer to a grill safe dish that has sides so the bbq sauce does not escape. Grill for about 10-15 minutes until the bbq sauce starts to spread and has a nice glaze to it. As you can see, some pieces in the picture are darker than others. My grill, like most, has a couple spots that get hotter than others and I did not rotate the tray during grilling.

Pork Belly Bites

Simple, easy pork belly burnt end recipe

Ingredients

  • 3 lb pork belly
  • 1/2 cup brown sugar
  • 1 tbsp salt
  • 1 tbsp smoked paprika
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 1/2 tbsp black pepper
  • 1 tsp chili powder optional
  • 1 cup Barbecue Sauce of choice

Instructions

  • 1. Cube pork belly into 1.5 inch squares.
  • 2. Mix dry ingredients together in a bowl.
  • 3. Toss cubes in the dry ingredients evenly, then spread out onto rack that is grill safe.
  • 4. Place in 275* Grill for about 2 hours, or until internal temperature of meat reaches 165*.
  • 5. Remove cubes from rack and place in a pan with sides. Cover evenly with the bbq sauce. Finish in grill for 10-15 minutes.
