Caring for Cast Iron

How to Season a Cast Iron Pan

Seasoning is the process of building up a protective layer of oil baked into the surface of your pan. Here’s how to do it:

1. Clean the Pan

• Scrub the pan with hot water and a small amount of soap if it’s brand-new or rusty. Dry thoroughly.

2. Apply Oil

• Rub a thin, even layer of oil all over the pan—inside, outside, and even the handle. Too much oil will create a sticky residue, so go light!

3. Bake the Pan

• Place the pan upside-down in an oven preheated to 450–500°F. Put a sheet of foil on the rack below to catch drips.

• Bake for an hour, then let the pan cool in the oven.

4. Repeat as Needed

• For new pans or heavily stripped ones, repeat the seasoning process 2–3 times for a strong, nonstick finish.

Reconditioning a Rusty or Neglected Pan

Found a rusty cast iron pan at a yard sale or pulled one out of storage? Or you could be a ‘cast-iron killer’ like me. Oops. Don’t worry—it can be saved!

1. Remove Rust– Scrub the rust with steel wool or a wire brush until you’re down to clean metal.

2. Wash Thoroughly– Clean the pan with hot water and soap to remove any loose rust or old seasoning.

3. Dry and Re-Season– Dry the pan thoroughly and follow the seasoning steps above to restore its finish. I have read that grapeseed oil works the best for reconditioning.

4. Use It Often– Regular cooking and care will continue to build the seasoning and keep the pan looking and performing like new.
